Strawberry Popsicles
A few weeks ago, I was brainstorming summer recipe ideas and asked my partner for suggestions. His recommendation was long-winded and quite creative.
He suggested that I develop a flavorful and fruity popsicle recipe and then promote it alongside my other popsicle recipes (Caramel Nectarine Popsicles! Mint Yogurt Popsicles!). His promotion ideas included Photoshopping the three popsicles flavors side-by-side, creating an Instagram story bookended by Spongebob memes and promoting the recipes on one of the hottest days of the year.
I loved the recipe suggestion and the marketing advice. These popsicles are easy to throw together, don't require a blender (big yay in my book) and make for the perfect summertime refresher!

Time: 5 minutes, plus 8 hours freezing time
Makes: about 6 popsicles
Ingredients
3 tablespoons sugar
3 cups hulled and halved strawberries, fresh or frozen
Juice of 1/2 a lime
Methods
Add the strawberries and sugar to a saucepan over medium-low heat. Heat until the strawberries are just soft enough to break apart. Then, use a wooden spoon or potato masher to break down the strawberries. Try not to let the mixture boil — if you let the juices boil, the final popsicles will have a distinct (and not very pleasant) cooked strawberry flavor.
Add the lime juice to the mashed strawberries. Then, separate the mixture into popsicle molds. Cool the popsicles in the fridge for several hours. Then, transfer the popsicles to the freezer and freeze them overnight. Eat up!
Sustainability Tips
Strawberries: Your best option here is to grow the strawberries yourself. Alternatively, you could buy local or organic berries. If you buy local fruit, that means fewer greenhouse gases were released during transportation compared to non-local fruit. If you buy organic fruit, that means the farmers did not use synthetic chemicals to grow the crops.
