Vegan Chocolate Ice Cream
When I was a kid, I would pick vanilla ice cream over chocolate ice cream in heartbeat. Although I still love classic vanilla ice cream, I've come to appreciate chocolate ice cream just as much. A competition between the two would be neck and neck.
This vegan chocolate ice cream in particular is everything I want in chocolate ice cream. It's creamy (thanks to coconut milk & coconut cream), ultra chocolatey (thanks to cocoa powder and a chocolate bar) and not too sweet.
This recipe works best if you have an ice cream maker. I used my Kitchen Aid stand mixer's ice cream maker attachment and it turned out beautifully. If you don't have an ice cream maker, I would suggest supporting a local ice cream shop instead!

Makes: about 4 dishes of ice cream
Ingredients
1/2 cup sugar
1/4 cup unsweetened cocoa powder
1 14-ounce can coconut milk
1 14-ounce can coconut cream
3 ounces dark chocolate
Methods
Prepare your ice cream maker according to manufacturer instructions. If you have the Kitchen Aid ice cream maker attachment like me, don't forget to place the bowl in the freezer the night before.
Add the sugar and cocoa powder to a medium saucepan and whisk to combine. Once combined, place the saucepan over medium heat and slowly stream in the coconut milk, whisking constantly to prevent lumps. Whisk in the coconut cream. Bring the mixture to a simmer, whisking occasionally. Once simmering, remove from heat and stir in the chocolate bar.
After the mixture has cooled slightly, carefully transfer it to a blender and blend until smooth. Alternatively, you could immersion blend the mixture. Transfer the ice cream base to a container and refrigerate until chilled, about 5 hours. Don’t skip this step! It makes the ice cream extra creamy.
Churn the ice cream according to the manufacturer's instructions. Transfer to a freezer-safe container and freeze for at least 8 hours. Soften at room temperature for about 20 minutes before eating. Eat up!
